About the project
Postmortem degradation of ATP is a universal and common process for all fish species. The ALTERATION project, led by the AQUIMER cluster, aims to have nucleotides recognized as new quality indicators to detect the early signs of alteration of fish fillets on two species: cod and Atlantic salmon, and to evaluate the performance of the Precice® kit.
Developed by NovoCib, this kit allows for detection of the first signs of fish spoilage thanks to the nucleotide dosing and thus to detect its freshness. Until now, the lack of a reliable, accurate and fast method for nucleotide determination has prevented the application of nucleotide criteria for assessing fish freshness.
