What is the nature of you business?

Amélie Maison d'Huitres is a brand of high-end oysters, whose products come from the Charente-Maritimes region. Retailing is done without intermediaries, directly to the restaurant operators. The brand also manages its own points of sale, in the form of corners, patio diners or restaurants, of which Place de la Madeleine is an international flagship. The brand is currently present on the main European markets (France, Italy, Spain, Switzerland, Denmark, Sweden, etc.) and plans to conquer the Asian and American continents in the near future.

 

For whom are your products/services intended? 

Our main retail channels are high-end restaurants and hotels. We also have customers among certain retail chains with fishmongers or "gourmet" departments, and certain event companies who request our catering services (provision of equipment and staff for the opening of the oysters). Finally, our products are also intended for final consumers through our sales outlets.

 

In what way are innovations and research important for your sector of business?

From a production point of view, innovation and research are becoming increasingly important in order to meet the growing demand for quality and the need to limit production costs, particularly in response to the ever-increasing mortality rate. Many oyster farmers are looking for innovative techniques to improve their production methods, both from quality and quantity points of view. The first technology that appeared nearly 20 years ago is the Seapa baskets, which allow oysters to benefit from the movement of currents, replacing human labour in order to make the shells more resistant and regular in shape.
