The storage temperature for certain aquatic products (0 to +2°C) presents several problems to operators in the sector. Even though these temperatures are identified at the European level, by the regulation EC 853/2004, one can still notice variations in interpretation of this regulation among the member states, which translates into divergences in legal requirements. Moreover, sometimes it can be hard to maintain a product at the target temperature due to just-in-time logistics and constraints linked to refrigeration equipment. The temperatures observed as running off-limits remain within a slight range, but they still have a strong financial impact on companies.

The purpose of this project is to report on the status of temperatures in the aquatic product industry, and to evaluate the impact of a possible modification of the maximum temperature of storage of aquatic products on their health and market quality via planned microbiology.
