The public authorities are increasingly encouraging industrialists to improve the nutritional quality of their products. So far, two tools (the SAIN system, LIM and linear programming) have been used separately in order to improve the formulation of food products. But this system is not dynamic and operational enough to optimise the profile of food products according to the specific constraints of the product and the business (regulatory, economic, technical).

Neither is there a formulation and process optimisation tool which would allow businesses to design products that are nutritionally optimised, economically viable and also organoleptically acceptable to the consumer.

The NUTRIDESIGN project will allow a formulation and process optimisation tool to be developed.
