The ‘Biscuiterie de la Cote d'Opale’ company, founded in December 2012, started its business by developing and marketing a sweet, local shortbread biscuit. This company wishes to highlight the products and the know-how that exist along the Côte d'Opale.

The aim of this project is to expand the range with an even stronger regional flavour by promoting coastal fishing products. The developed finished products will be positioned to favour fish species which can be badly promoted at certain times of the year.
Few dry fish or crustacean-tasting aperitif products are developed. The innovation incorporates pieces of seafood not, as is usually the case, flavourings .
The difficulty is also one of adapting the manufacturing process used for cheese-flavoured filled biscuits to a recipe that incorporates seafood products, whilst achieving long shelf-life at an ambient temperature.
The expected result is to be able to promote coastal products at the commercial level. This will enable
- the range of finished products to be extended and new markets at supermarket level to be reached ,
- workshop production to be increased and work tools to be optimised
- extra jobs to be created
- perennial species from coastal fishing to be promoted.
