Study on the process and packaging of products of thawed origin

Difficulties in obtaining supplies of certain aquatic species and a need for flexibility and reactivity in stock management / orders lead more and more professionals to supply the market with products of frozen/thawed origin.

The study focuses on the following points:
- Controlling the thawing out process from the point of view of food safety,
- Marketing study and packaging proposals depending on the product, thereby meeting consumers' expectations,
- Optimisation of lifespan.

This project, labellised by the AQUIMER Pole of Competitiveness on 23 May 2007, therefore aims to optimise all of these parameters with the objective of offering products of irreproachable quality.
