The target of the project is optimize cooling in fish trading of large pieces of fish (tuna, swordfish, cod, ...), and products stores in large-volume containers (200 - 300kg) like bins of byproducts, or small pelagic fish (Herring, Mackerels, ...).

The result will be communicated in the form of recommendations, good practices, information / awareness sessions... via indicators that can be easily converted.

The optimization will be evaluated with regards to the kinetics of cooling, the economic and quality (microbiology, organoleptic, freshness, shelf life) interest.
