Market study of raw sushi-type products

Along with the very modern-day values of health and practicality, the consumption of raw fish and sushi is developing rapidly in France and in Europe. Therefore, a study has been carried out to better understand what is at stake in this market:

  • • To explore the raw fish sector from the point of view of consumption and how it is perceived by consumers; To highlight their expectations from the point of view of product mix  (product, positioning, price) and the distribution channel.
  • To understand how it works at present and the constraints of distributors and RHF players; To highlight their expectations and needs.

This project was labellised by the  AQUIMER Pole of Competitiveness on 21 February 2006.
